
I knew Oreo and Bourbon were everyone’s favourite biscuits but after putting a poll unexpectedly Jim Jam turned out to be everybody’s favourite as well. Jim Jam are jam and vanilla cream-filled biscuits which are so yummy that they are indeed my favourite as well.
Let’s take a look at the ingredients and the procedure :
Step 1 : Cookies
Unsalted Butter (1/4 Cup) ( You can use salted butter, avoid additional salt )
Caster Sugar (1/3 Cup) ( You can use powdered sugar )
Vanilla extract (1/4 Tsp)
Blend until its soft & fluffy
Milk (1 Tablespoon)
Blend until well incorporated
All purpose flour (2/3 cup + 1 Tablespoon)
Pinch of salt
Blend for 10 seconds
Form a ball
Wrap it in a cling wrap and refrigerate for 1 hour
Put dough between 2 cling films
You can use parchment paper as well
Roll it out with thickness 2 – 3 mm
Cut with a cookie cutter ( I have got a larger one but you can use anything you want )
Cut smaller circle ( I have used back of the piping tip for it )
Cut half of them
Place it carefully on a parchment paper.
You can use parchment paper or butter paper or silicone mat
Create a pattern with back of the knife
On the cookies which haven’t been cut, create a smaller impression of a small circle
Again create the same fanning pattern
In the circle pierce 5 dots with a toothpick
These are exact Jim Jam designs you can skip if you wish
Pre-heat oven at 180C and back for 10 – 12 min
Step 2 : Filling
Unsalted butter (1/8 cup)
Blend for a 1 min
Vanilla extract (1/8 Tsp)
Milk (1/2 Tbsp)
Icing sugar (1/2 Cup)
Blend until well combined
Put it in a piping bag
In another piping bag put 2 Tbsp Mixed Fruit Jam and mash or squeeze it up so that it gets a piping consistency
Step 3: Assembling
Flip a cookie with no circle cut
Pipe vanilla cream leaving out the middle space
Pipe jam in the middle
Put another cookie on the top
Homemade Jim Jam cookies are ready.
